ABSTRAK Prarancangan pabrik keju Cheddar ini menggunakan bahan baku susu kambing. Kapasitas produksi pabrik ini adalah 1800 ton/tahun dengan hari kerja 330 hari/tahun. Proses produksi secara keseluruhan menggunakan proses kontinyu melibatkan proses fermentasi susu dengan bantuan bakteri lactobacillus casei. Bentuk perusahaan yang direncanakan adalah Perseroan Terbatas (PT) dengan menggunakan struktur organisasi garis dan staf. Kebutuhan tenaga kerja untuk menjalankan perusahaan ini berjumlah 146 orang. Lokasi pabrik direncanakan didirikan di Desa Seruway, Kabupaten Aceh Tamiang dengan luas area 20,120 m2. Sumber air pabrik ini berasal dari Sungai Aceh Tamiang dengan total kebutuhan air sebesar 11.114,42 kg/jam, serta untuk memenuhi kebutuhan listrik sebesar 815,23 kW. Hasil analisa ekonomi yang diperoleh adalah sebagai berikut. a. Fixed Capital Investment : Rp. 461.769.000.000 b. Working Capital Investment : Rp. 211.083.000.000 c. Total Capital Investment : Rp. 672.852.000.000 d. Total Biaya Produksi : Rp. 844.330.000.000 e. Hasil Penjualan : Rp. 2.066.742.000.000 f. Laba Bersih : Rp. 41.072.614.000.000 g. Pay Out Time : 3,2 tahun h. Break even Point : 37% i. Internal Rate of Return : 25% Berdasarkan studi kelayakan teknis dan ekonomis di atas, maka dapat disimpulkan bahwa prarancangan pabrik keju Cheddar dari susu kambing ini layak untuk dilanjutkan ke tahap rancangan.   ABSTRACT Preparation of Cheddar cheese plant using goat’s milk as raw material with production capacity of 1800 ton/years, working day for 330 days/year. The design of cheddar cheese factory is using fermentation method with Lactobacillus casei bacteria. The company’s planned form is Limited Liability Company (PT) using line and functional structure method. The need for labor to run this company amounted to 147 employees. The factory location is planned to be estabilished in Seruway village, Aceh Tamiang District, Aceh Province,with a land area of 20.120 m2. The water source of this plant comes from Aceh tamiang river with total requirment of 11,114,42 kg/hour, and to fullfill the electricity needs of 815,23 kW.
